Haystack Cookies

Ingredients:

1 cup white sugar
1/4 cup evaporated milk
1/2 cup margarine
2 tbsp. cocoa
1/2 tsp. vanilla
1 1/2 cups quick rolled oats
1/2 cup coconut

Directions:

1. Combine sugar, cocoa, milk and margarine in a pot.
2. Bring these 4 ingredients to a rolling boil - stirring constantly.
3. Boil for exactly 3 minutes.
4. Remove from heat.
5. Add vanilla, coconut and rolled oats.
6. Stir to combine.
7. Drop by spoonfuls onto a cookie sheet. Work quickly before the mixture cools off.
8. Cool

If you boil the mixture too long - it will crumble apart -- if you don't boil it enough - it will not harden properly.
